    I appreciate all the resources you make available here. I have considered using waterless cookware in the past, but just never made the commitment. But I never knew I could cook rice with waterless cookware. That fact alone may tip the balance for me.

      You can always use waterless cookware like any other cookware. If you prefer to cook rice the "usual" way it can be done in waterless cookware like any other cookware. It's best to not start on high temperatures as high temperatures can sometimes discolor stainless steel cookware.  A good cleaning with Barkeepers Friend will clean up the stainless steel nicely if it gets discolored.
